PEANUTTY FUDGE ROLLS | |
3 c. sugar 3/4 c. butter 2/3 c. (5 fl. oz. can) evaporated milk 1 (12 oz.) pkg. semi-sweet chocolate pieces 1 (7 oz.) jar marshmallow creme 1/2 c. creamy peanut butter 1 tsp. vanilla extract 1/2 c. finely chopped peanuts 1/2 c. finely chopped walnuts 1/2 c. flaked coconut 1. In a heavy 2 1/2 to 3 quart saucepan, combine sugar, butter and milk. Stirring constantly, bring to a rolling boil. Continue boiling and stirring for 5 minutes over medium heat. 2. Remove from heat. Add chocolate pieces and stir until melted. Add marshmallow creme, peanut butter and vanilla. Beat until well blended. Spoon fudge mixture into greased 2 quart bowl and cover with waxed paper. Allow to cool to room temperature. 3. Divide mixture into thirds, then shape each third into a 10 inch log. Roll one log in peanuts, one log in walnuts and the remaining log in coconut flakes. Chill. To serve, cut into 1/2 inch slices. Makes 3 (10 inch) logs. |
