SWEET POTATO GRATIN 
1 garlic clove, minced
3 tbsp. butter
1 tbsp. flour
1 c. heavy cream
4 sweet potatoes, peeled & cut into 1/4" rounds
1/4 c. bread crumbs
1/4 c. Parmesan cheese

Cook garlic in butter. Add flour and cook for 3 minutes. Place sweet potatoes in dish. Season with salt and pepper. Pour cream over and bake at 325 degrees for 1 hour. Take out and sprinkle with crumbs and Parmesan cheese. Bake at 325 degrees for 15 minutes. Place under broiler for 12 minutes to brown the top.
