ORIENTAL RICE SALAD 
3 c. cooked rice
1/2 pkg. (5 oz.) frozen peas, uncooked
4 scallions, sliced with tops
1/2 lb. shrimp (canned, frozen or fresh)

DRESSING:

5 tbsp. vinegar (sold in Oriental food shop)
3 tbsp. soy sauce
1 1/2 tbsp. sesame oil
5 tbsp. salad oil
1 tbsp. dry mustard dissolved in 1/2 tsp. water to make paste

Mix salad ingredients in a large bowl. Mix all dressing ingredients in a jar; shake well. Pour the dressing over salad, toss well; cover. Marinate in the refrigerator overnight. Serves 8.
