CARLA AND CINDY'S CORNMEAL
WAFFLES
 
1 1/2 c. boiling water
1 c. cornmeal
1/4 c. oil or butter
1 1/2 c. buttermilk
2 eggs, separated
1 c. flour
1 1/2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt

Boil water. Pour over cornmeal. Add oil (or melted butter). Stir in buttermilk. Stir in egg yolks. Sift flour with baking powder, soda and salt. Mix dry ingredients with cornmeal mixture. Beat 2 egg whites until stiff, fold into batter. Bake in waffle iron.
