CALICO BEAN SOUP | |
1 pkg. bean mix (2 c.) 1 qt. water 1 qt. tomatoes 2 bay leaves 1 tsp. vinegar or juice of 1/2 lemon 2 to 4 ham hocks 2 onions, finely chop 2 cloves of garlic, chop 1 carrot, finely chop 1 stalk celery, finely chop 1 tsp. chili powder Wash beans thoroughly, cover with water and let soak overnight. In the morning, drain. Add water and ham hocks. Simmer 2 1/2 to 3 hours. Add remaining ingredients. Simmer another 1/2 to 1 hour. Correct seasoning. Bone meat and discard fat and bones. |
