"IT'S A SNAP" CHEESECAKE 
1 env. unflavored gelatin
1 c. boiling water
1 1/2 or 2 (8 oz.) pkgs. cream cheese
8 or 9 inch graham cracker crust
1/2 c. sugar
1 tsp. vanilla

In large bowl, mix gelatin and sugar. Add boiling water and stir until gelatin is completely dissolved. With electric mixer, beat in cream cheese and vanilla until smooth. Pour into prepared crust; chill until firm, about 2-3 hours. Top with fresh or canned fruit. Cherry pie filling makes a delicious topping.
