TEX - MEX TURKEY BAKE 
2 c. Bisquick mix
1/2 c. cold water
1 lb. ground turkey
1 (1 1/4 oz.) pkg. taco seasoning mix
1 c. water
1 (10 oz.) pkg. frozen chopped spinach, thawed & squeezed dry
1 c. Ricotta cheese
1/3 c. green onions, chopped
1 1/2 c. Cheddar cheese, shredded
1 c. sour cream
1 egg, lightly beaten

Heat oven to 350 degrees. Combine baking mix and 1/2 cup water; stir until soft dough forms. Press dough in bottom of greased 13 x 9 x 2 inch baking dish. Cook turkey in large non-stick skillet until brown. Stir in taco seasoning mix (dry) and 1 cup water. Bring to a boil; reduce heat and simmer 15 minutes, stirring occasionally. Spoon mixture over dough. Combine spinach, ricotta cheese, and onions; spread over turkey mixture. Combine Cheddar cheese, sour cream and eggs; spoon evenly over spinach mixture. Bake 30 to 35 minutes or until set. Let stand 5 minutes before serving. Yield: 8 servings.
