SPEEDY MOUSSAKA 
1 lb. lean beef round, trimmed of fat, ground
2 c. no - salt added tomato sauce
1 sm. onion, minced
1/2 tsp. oregano
1/2 tsp. garlic powder
1/8 tsp. ground cinnamon
1/8 tsp. ground nutmeg
1 eggplant (about 1 1/4 lb.) pared, diced
2 oz. part - skim feta cheese, crumbled (optional)

Break meat into chunks in baking pan. Broil meat until browned. Pour off fat. For sauce, combine tomato sauce, onion, garlic powder, oregano, cinnamon and nutmeg in bowl. Layer meat, sauce and eggplant in oven proof casserole. Sprinkle with cheese, if desired. Bake in preheated 350 degree oven for 45 minutes. Makes 4 servings at 206 calories per serving.
