MINIATURE CHEESE CAKES 
Put one vanilla wafer in the bottom of a paper cup (used for cupcakes). Place shell in regular size muffin tin before putting vanilla wafer in it. Soften 2 eight ounce packages cream cheese in bowl; add 3/4 cup sugar, 3 eggs, and 1 teaspoon vanilla. Beat well. Pour over vanilla wafers in cups. Bake at 375 degrees for 10 minutes. Spoon contents of 1 can of cherry pie filling or blueberry pie filling over cakes. Try to put 3 cherries on each cake. Chill before serving. Makes 24 cheesecakes. These freeze great. Put into plastic bag and freeze and take out when you want to serve. Good to make up and keep on hand for drop-in guests or for a snack.
