MINIATURE CHEESE CAKES 
2 (8 oz.) pkgs. cream cheese, soft
1 tbsp. lemon juice
2 eggs, slightly beaten
1 tsp. vanilla
1 box vanilla wafers
3/4 c. sugar

Combine ingredients in large bowl, beat at high speed for 5 to 10 minutes until creamy. Put cupcake liners into muffin pan. Add 1 cookie flat side down. Add 1 tablespoon in each cup, not over 3/4 full. Bake at 350 degrees for 15 minutes or longer until brown or cracked, slightly. Remove and cool. Will fall slightly in middle; makes 30 cookies. Put cherry, pineapple or your favorite pie filling (canned), about 1 teaspoon on each and refrigerate.
