CHEESY BACON BAKED POTATOES 
4 baking potatoes
6 slices bacon, cooked, cool and crumbled (save drippings)
1/3 c. chopped onion
1/3 c. diced green pepper
2 c. sliced mushrooms
2 c. grated Cheddar cheese
2 tbsp. milk
2 tbsp. butter
1 egg, slightly beaten
1 tsp. salt

Scrub potatoes clean, pat dry, pierce with fork. Bake until soft. With saved bacon drippings, saute onions, green peppers, and mushrooms. Set aside.

When potatoes are cooked, slice the top off each lengthwise. Scoop out flesh, keep shell intact. Mash potato pulp, add 1 cup cheese, half of bacon and rest of ingredients. Mix well. Spoon into shells and top with rest of cheese and bacon. Replace in 350 degree oven until cheese on top melts.
