CHEESY BAKED POTATO 
1 bakign potato or 1 c. mashed potato
1/4 c. cottage cheese
1/2 tbsp. chopped chives

Wash and dry potato. Bake at 375 degrees for one hour or until done. Remove slice from top, or make a quarter cut and open potato. Combine cottage cheese with chopped chives, flavor with salt and pepper and pile on top of potato. Serves 1.
