CHEESY POTATO BAKE | |
6 med. potatoes 3 eggs, beaten 6 tbsp. flour 1 c. shredded Cheddar cheese 1 tsp. chives Boil potatoes in their skins for 20-25 minutes or until potatoes are almost tender. Drain and chill. Peel and shred potatoes. Add eggs and flour; mix. Roll mixture into 2 or 3 inch balls, then cook in lightly salted water that is just under the boiling point. Potatoes will rise to the top when done. Top with shredded cheese, and bake at 350 degrees for 30 minutes or until golden brown. Top with chives and serve. |
