OKRA WITH TOMATOES 
2 lb. okra, fresh or frozen
3 cloves garlic, crushed
2/3 c. oil
3 ripe tomatoes, finely chopped or 12 oz. can tomato sauce
1/2 tsp. coriander
Juice of 1 lemon
3 tsp. salt
1/2 tsp. pepper

Wash fresh okra. Cut off stems and dry thoroughly (when using frozen okra, thawed and dry thoroughly).

Fry in hot oil until light brown and tender; drain. Saute garlic in the hot oil. Combine fried okra and garlic in a saucepan. Add chopped tomatoes or sauce, salt, spices, lemon juice and 1 cup of water. Let mixture simmer over moderate heat for 30 minutes or until done. Serve hot or cold as a side down. Serves 6.
