APPLESAUCE RAISIN BREAD | |
1/3 c. unsalted butter 1 1/3 c. granulated sugar 2 eggs 1 1/2 c. applesauce 1 1/2 c. flour 1 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 1 1/2 tsp. ground cinnamon 1/2 tsp. ground nutmeg 1 tsp. vanilla extract 1 c. chopped walnuts 1 c. raisins Preheat the oven to 350 degrees. Grease a 9 x 5 x 3 inch loaf pan and place on a baking sheet. In an electric beater or by hand, cream the butter with the sugar. Add the eggs, one by one, beating well after each addition. Add the applesauce and blend well. In another bowl, sift the flour, baking powder, baking soda, salt, cinnamon and nutmeg. Gradually add dry ingredients to applesauce mixture; add vanilla extract and blend well. Fold in the nuts and raisins. Pour batter into the prepared loaf pan and bake in the preheated oven for 45 minutes, or until a toothpick inserted in the center comes out clean. Cool, turn out the loaf and slice for serving.
