APPLESAUCE SPICE BREAD 
(Sprinkle with coarsely shredded apples before baking).

2 c. flour
1 tsp. each: baking powder, baking soda, cinnamon and ginger
1/2 tsp. salt and cloves
1/2 tsp. ground cardamom (optional)
1/2 c. butter, softened
1 c. packed brown sugar
2 eggs
1 c. applesauce
1 c. walnuts, chopped fine

Combine flour, baking powder, baking soda, cinnamon, ginger, salt, cloves and cardamom. Set aside. In large bowl cream butter. Gradually beat in sugar until light and fluffy. Beat in eggs one at a time. Stir in flour mixture alternately with applesauce just until blended. Stir in walnuts. Turn into greased 9 x 5 x 3 inch loaf pan. Bake in preheated 325 degree oven for 60-70 minutes until pick comes out clean. Cool in pan on rack 5 minutes; remove from pan - cool.
