CHICKEN CHESTNUT 
1 lg. onion, chopped
1 - 1 1/2 c. celery, chopped
1 can sliced water chestnuts
1 can cream of chicken soup
3/4 can water or broth
1 stick butter
2 c. cooked rice
2 c. chicken, chopped
1/2 c. potato chips, crushed

Saute onion and celery in half butter. Add soup, water, or broth. Mix well. Add remaining ingredients except butter. Pour into greased baking dish. Melt remaining butter, add 1/2 cups potato chips. Mix well, sprinkle over casserole. Bake in pre-heated 300 degree oven for 30 minutes.
