PASSOVER STRAWBERRY WHIP PIE | |
1 c. matzo meal 1/2 c. oil or butter 1/8 tsp. salt 1/4 tsp. cinnamon 1/2 c. chopped nuts (optional) FILLING: 2 egg whites 1 tbsp. sugar 1 pt. fresh strawberries Mix shell ingredients and press into pie plate. Bake at 350 degrees until light brown. Beat egg whites until very stiff. Add sugar. Beat well at high speed. Crush 1/2 of strawberries and fold in. Adjust sweetness. Slice remaining strawberries and cover crust, reserving some for garnish. Add strawberry whip. Swirl prettily on top and garnish with remaining sliced strawberries. Freeze at least 4 hours. Can be served either frozen or partially thawed. Strawberry whip may be made alone and frozen as ice cream. |
