AMAZING CHOCOLATE CAKE 
1 (8 oz.) can beets
2 c. flour
2 tsp. baking soda
1/2 c. soft butter
2 1/2 c. firmly packed brown sugar
3 eggs
2 tsp. vanilla
3 sqs. unsweetened chocolate, melted
1/2 c. buttermilk

Drain beets, reserving juice. Process beets in food processor until very fine. Stir together flour and soda in small bowl.

Beat butter, sugar, eggs and vanilla in large bowl until very fluffy. Beat in chocolate. Alternately beat in flour mixture and buttermilk, beginning and ending with flour. Mix until smooth. Stir in beets and juice.

May be baked in two 9 inch pans or one 9 x 13 inch pan - greased and floured. Bake layers 35 to 40 minutes - oblong pan 45 to to 50 minutes in 350 degree oven. Use a fudge frosting to cover.
