SCALLOPED POTATOES 
7 1/2 lb. potatoes
1 1/2 c. butter
1/2 c. flour
4 tsp. salt
1 tsp. white pepper
2 qt. milk

Pare and cut potatoes into thin slices. Cover with boiling water and simmer 10 minutes. Drain and spread in shallow greased baking pans. Blend together melted butter, flour, and seasonings. Add milk slowly and cook until thickened and smooth; stir constantly. Pour sauce over potatoes. Sprinkle with paprika, cover, and bake in 350 degree oven for 1 1/2 hours. Remove cover and brown. Makes 25 servings.
