PUMPKIN CAKE ROLL 
Mix:

3 eggs
1 c. granulated sugar

Stir in:

2/3 c. pumpkin
1 tsp. lemon juice

Add:

3/4 c. flour
2 tsp. cinnamon
1 tsp. baking powder
1 tsp. ginger
1/2 tsp. salt
1/2 tsp. nutmeg

Mix well. Spread batter on a greased and floured 15x10 inch cookie sheet. Sprinkle with 1 cup chopped nuts. Bake at 375 degrees for 15 minutes. Immediately invert onto a towel sprinkled with powdered sugar. Roll up cake and towel jelly roll style starting with short side. Cool completely!

Mix:

1 c. powdered sugar
1 (8 oz.) cream cheese
1/4 c. butter
1/2 tsp. vanilla

Unroll cake and spread with cream cheese mixture and reroll cake. Cover and chill.
