PUMPKIN ROLL CAKE 
2/3 c. pumpkin (1 sm. can will make 3 cakes)
1 c. sugar
3 eggs
1 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. nutmeg
3/4 c. flour
1/2 c. finely chopped nuts (opt.)

Mix all together. Spray cookie sheet with Pam, cover with wax paper. Spray wax paper. Spread above mixture evenly in pan. Bake 400 degrees for 11 to 12 minutes. Remove from oven, turn out onto waxed paper; let cool.

FILLING:

1 (8 oz.) pkg. cream cheese
1 c. 4X sugar
2 tbsp. butter, melted

Mix until smooth, spread evenly over cooled cake. Carefully roll cake into log. Slice and enjoy.
