MOIST APPLE CAKE | |
2 eggs 1 1/2 c. sugar (or fructose) 1 1/2 c. cooking oil 1 tbsp. lemon juice 1 tsp. salt 2 tsp. vanilla 2 1/4 c. unbleached flour 1/2 c. whole wheat flour 1 1/4 tsp. baking soda 2 c. shredded tart apples 1 c. chopped dates (or raisins) 1 1/4 c. chopped nuts Beat eggs well; add sugar (or fructose) and mix. Add oil, vanilla and salt. Combine flours with soda; stir into egg mixture. Stir in apples, dates and nuts. Turn into a greased and floured tube pan and bake at 325 degrees for 1 hour. Preparation time: 1 1/2 hours. Yield: 1 tube-type cake (16 servings) Hint: Glaze cake while hot with apple juice concentrate for an extra moist treat. |
