MICROWAVE POLENTA PIE 
1 c. water
1/8 tsp. salt
1/3 c. yellow cornmeal
8 oz. Italian sausage
Sm. onion, chopped
Garlic
2 c. sliced zucchini
1 c. mushrooms
1/2 tsp. salt, basil
1/4 tsp. oregano
1 (8 oz.) can tomato sauce
1/2 c. shredded Mozzarella cheese

Microwave High water in 2 cup measure, 2 to 3 minutes. Stir in salt and cornmeal. Microwave High 1 to 1 1/2 minutes; mixture thickens. Spread evenly in 8 inch baking dish.

Cook sausage, add onion and zucchini. Break sausage into small pieces and add salt, basil and oregano. Add to cornmeal mixture and microwave high 3 to 4 minutes.

Stir in tomato sauce heat high 4 minutes. Top with cheese and heat 1 to 2 minutes. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
