COCONUT PIE (MICROWAVE) 
1 1/2 c. milk
3 eggs
1/3 c. soft butter
3/4 c. sugar
Red and yellow food coloring
1/3 c. flour
3/4 tsp. nutmeg
3/4 c. coconut

Lightly grease and dust with sugar a 9 inch glass pie plate. Put all ingredients except coconut in food processor, cover and process until blended and smooth. Add coconut and process at slow speed to blend. Pour into prepared pie plate. Bake in microwave oven 8 to 10 minutes, until set. Omit coconut, have custard pie. Substitute pecans for coconut, have pecan pie.

Since microwave ovens vary in power, you may need to adjust your cooking time.
