CARROT PIE 
1 pkg. carrots
1 can evaporated milk
6 eggs
2 c. sugar
1 tsp. cinnamon
2 tsp. nutmeg
2 tsp. vanilla extract
1 tsp. lemon extract
1/4 lb. butter
1/2 tsp. salt or to taste

Cook 1 or 2 packages of fresh carrots or canned carrots. Blend in a food processor. Mix milk, eggs, sugar, cinnamon, nutmeg, butter, or butter, vanilla flavor, lemon flavor and salt. Pour mixture in a 9 inch crusted pie plate and bake at 350 degrees until done.
