CAULIFLOWER - CARROT PIE 
1 package crushed croutons enough to make an 8 inch pie shell. Add 1/2 cup melted butter and press into pan. Bake 8 minutes at 375 degrees. Saute 1 cup cauliflower and 1 cup carrots (any quantity you wish), 1/4 cup onions and garlic in butter. Spread grated 1/2 cup cheddar cheese in bottom of shell, then add vegetables and other 1/2 cup cheese. Mix 3 eggs with 1/2 cup milk and pour over all. Bake 30 minutes at 375 degrees.
