CHEESE DIP FOR CELERY, CARROTS,
CAULIFLOWER
 
3 egg yolks
1 tbsp. sugar
1 tbsp. vinegar
1 tbsp. butter
2 (8 oz.) pkgs. cream cheese
2 jars or pkgs. pimiento cheese
2 tbsp. chopped onion

Put egg yolks, sugar, vinegar and butter in a saucepan, heat just until the butter melts, then add cream cheese, pimiento cheese and chopped onion, stir constantly until all is nicely melted and smooth. Serve with the raw veggies.
