MARINATED CAULIFLOWER, CARROT
AND CUCUMBER
 
2 c. vegetables (1 lb.) cauliflower, carrot, cucumber, chilli (optional)
1 tbsp. salt
1 c. white vinegar
1 c. sugar
1/2 c. water

Cut the vegetables in bite size pieces. Add 1 tablespoon salt, mix well. Put aside and shake well once in a while. Let stand for about 5 hours. Then squeeze dry.
