CARROT PIE 
1 c. cooked, mashed carrots
2/3 c. brown sugar
1 c. milk
2 eggs, beaten
1/2 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. salt

Combine ingredients. Pour into pastry-lined pie pan. Bake at 425 degrees until crust is brown and filling firm.
