CHICKEN BROCCOLI CASSEROLE 
2 boneless chicken breasts, cooked & cubed
1 can broccoli cheese soup or cream of broccoli (10 3/4 oz. can)
1 head of broccoli, cooked
2 to 2 1/2 soup cans of milk or cream
1 tbsp. minced onions
Cheddar cheese
Salt & pepper to taste
4 c. cooked rice

Use 8 x 8 x 2 inch casserole dish. Mix milk and soup until blended. Add minced onion, salt and pepper. Add 4 or 5 slices of Velveeta cheese or 1/4 cup shredded cheese. Drain cooked broccoli well. Add broccoli, then cubed chicken to casserole. Mix together. Cover top of casserole with slices of Velveeta cheese. Cover and bake. Bake at 450 degrees for 15 minutes or until hot. Serve directly from oven over cooked rice. Serves 6.
