LO - CAL BANANA BRAN MICROWAVE
MUFFINS
 
1 c. Bran Flakes
1 c. whole wheat flour (may sub. white flour)
1 1/2 tsp. baking powder
2 tbsp. brown sugar, packed
1 tsp. cinnamon
1 tsp. lemon peel
1/2 tsp. nutmeg
2 med. bananas
2 tbsp. oil (canola or sunflowerets)
1 egg, beaten
1 tsp. vanilla

Combine bran, flour, baking powder, sugar and spices. Add bananas, oil, egg and vanilla; stir until moistened.

Spoon 2 tablespoons mix into paper liner. Microwave on high for 30 seconds (about), one at a time as needed. Each muffin 104 calories.

Since microwave ovens vary in power, you may need to adjust your cooking time.
