YELLOW RICE WITH VIENNA SAUSAGE 
4 c. water in pot
3 c. rice
2 cans Vienna sausage
3/4 c. tomatoes or 1 (8 oz.) can
1 pkg. sazon goya
1 tsp. adobo
2 tsp. oil in the water

Mix oil, sazon, adobo, tomato sauce and the broth from the Vienna sausage. Put in dish and cut in half. Add water and when it starts to boil, add rice. Stir occasionally. Add the cup of Vienna sausages. Put on medium and a top on the pot for 15 minutes, stir and put top on again and put on medium-low for 20 minutes and stir.

One of the all time favorite quick fixes for my Cuban family! I change it up depending what's on hand- such as adding a can of mixed veggies or corn and/or creamed corn -- I toss it all into my rice cooker. Very easy and a great meal. We enjoy it paired with a spincah fritatta.

This is a Puerto Rican dish that is made when there's not much food and you need to fill a lot of mouths, like arroz con gandules. I see a lot of mentions lately in the past several years of Cubans trying to claim this humble dish but it's from here, the Nuyoricans made it up.
