ORIENTAL SALAD | |
2 kinds of lettuce or more (head & red leaf, maybe a little endive, can also use spinach) 1 red onion, sliced 1/2 lb. bacon, fried & crumbled 2 c. mandarin oranges, drained 1 sm. pkg. almonds, slivered Toss lettuce, add sliced onion, oranges, bacon and almonds. (I layer the salad.) DRESSING: 1/2 tbsp. lemon juice 1/8 tsp. salt 2 1/2 tbsp. vinegar 2 1/2 tbsp. honey 1/2 tsp. dry mustard 1/2 tsp. celery seed 1/2 tsp. paprika 1/2 tsp. grated onion Scant 1/2 c. oil Mix all dressing ingredients and put in a glass jar. Refrigerate at least 2 hours. Shake well and pour over lettuce mixture just before serving. Serves 8 to 10. Make the salad the day you'll be serving it, but make the dressing the day before and take it out of the refrigerator 30 minutes before pouring it over the salad. |
