ZUCCHINI ROUNDS 
1/2 c. Bisquick mix
1/4 c. grated Parmesan cheese
1/8 tsp. pepper
Salt to taste
2 slightly beaten eggs
2 c. shredded zucchini
2 tsp. butter

Mix cheese and Bisquick, salt and pepper. Stir in egg until moistened. Fold in zucchini. Melt butter on medium heat. Drop by tablespoon in butter. Cook in butter 2 or 3 minutes each side until brown.
