APPLE WALNUT CAKE 
3 eggs, beaten
2 c. sugar
1/2 c. vegetable oil
2 tsp. vanilla
2 c. all-purpose flour
2 tsp. baking soda
2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/4 tsp. salt
4 c. apples, diced
1 c. walnuts, coarsely chopped

In a large mixing bowl, beat together eggs, sugar, oil and vanilla. Combine flour, baking soda, cinnamon, nutmeg and salt. Mix into the batter. Fold in apples and nuts. Spread into a 13 x 9 inch baking pan. Bake at 325 degrees for 50 to 60 minutes or until cake tests done. Cool. Frost with the following frosting.

CREAM CHEESE FROSTING:

2 (3 oz.) pkgs. cream cheese, softened
1/4 c. butter
1 1/2 c. confectioners sugar
1/2 tsp. vanilla

Combine all ingredients in a small mixing bowl. Whip until smooth and spread over cake. Yield: 12 to 15 servings.
