FATHER'S DAY PEACHY LEMON CAKE 
1 pkg. lemon cake mix
1/4 tsp. ground ginger
1/2 tsp. rum extract
1 1/3 c. frozen sliced peaches, thawed and drained, or 3 med. ripe peaches, peeled, pitted and sliced
1 (16.5 oz.) Duncan Hines Vanilla Creamy Frosting
Or 1 c. whipping cream
1/4 c. confectioners' sugar, optional

Cake: Prepare, bake and cool cake as directed on package for two 8 x 1 1/2 inch round layer pans.

Frosting (Use either method) : Quick method: Use Duncan Hines Vanilla Creamy Frosting with ginger (optional) and rum extract (optional) stirred in.

Mix method: Beat cream until stiff peaks form; beat in confectioners' sugar and add ginger (optional) and rum extract (optional)

Frosting directions: Spread half of frosting on one cake layer. Reserve 6 peach slices; arrange remaining peach slices on frosting. Add second layer and top with remaining frosting. Decorate with reserved peach slices. Refrigerate until served.
