NOODLE PUDDING
8 oz. wide egg noodles
2 tbsp. butter
2 eggs, well beaten
1 c. sour cream
1 c. Farmer Cheese (substitute dry cottage cheese)
1/2 c. sugar
1/2 c. pineapple (crushed, or tidbits), drained
2 apples, peeled, quartered, diced
1/4 c. raisins (or more if desired)
1 tsp. cinnamon
1 tsp. salt
Cracker crumbs of Corn Flake crumbs for topping (optional)

Preheat oven to 350 degrees. Cook noodles according to directions on package. Drain, put into bowl and add butter. Mix lightly and set aside.

Combine the eggs, cream, cheese, sugar, pineapple, apples, raisins, cinnamon and salt. Add to noodles.

Pour into buttered casserole pan, 9x9 inches, and top with cracker crumbs or corn flake crumbs. Bake 45 minutes, covered. Remove cover and bake additional 15 minutes.

Variation: Top with brown sugar instead of the cracker crumbs for a sweeter flavor.
