SALMON LOAF WITH DILLED CREAMED
PEAS
 
1 egg
1/4 c. milk
1/2 tsp. salt
1/8 tsp. pepper
1 (6 3/4 oz.) can Hormel chunk pink salmon (reg. or smoke flavored), undrained and flaked
10 finely-crushed, rich, round crackers or saltines
1 tbsp. chopped green onion
1 tbsp. chopped parsley
1 tbsp. melted butter
Paprika
1 pkg. frozen peas with cream sauce, prepared
1/4 tsp. dill weed

Heat oven to 350 degrees. Grease a 5 1/2 x 3-inch loaf pan or small baking dish. In medium bowl, lightly beat egg, milk, salt, and pepper; stir in salmon, crackers, onion, parsley and butter. Blend well. Firmly press salmon mixture into loaf pan with fork or form into loaf about 5 x 3-inches and place in small baking dish. Sprinkle with paprika. Bake, uncovered, 25 to 35 minutes until firm. Cool 5 minutes; remove from pan. Combine prepared green peas with dill; serve over salmon loaf slices. 2 to 3 servings.
