ZUCCHINI CASSEROLE 
3 c. zucchini (unpeeled), sliced and quartered
1 c. Bisquick mix
1/2 c. chopped onions (2 medium)
1/3 c. Parmesan cheese
2 tbsp. parsley
1/2 tsp. salt
dash of pepper
dash of garlic
1/2 tsp. oregano
1/2 c. oil
3 eggs, beaten

Mix the first 2 ingredients well. Add other ingredients in the order listed, mixing well after each addition. Pour into a buttered pie pan (9-inch or so).

Bake at 350°F for 45 minutes, until firm. Serve warm.

Yields 8 to 10 pieces.
