OKRA IN CHEESE SAUCE 
1/2 c. butter
1/4 c. chopped onion
1/4 c. chopped bell pepper
2 tbsp. flour
Salt and pepper
2 c. tomatoes
1/2 lb. Velveeta
10 oz. okra (cooked and drained)

Saute onion and bell pepper in butter just until done. Add the flour, salt and pepper. Add tomatoes and Velveeta. Cook just until the cheese is melted. Pour over okra and bake in 375 degrees oven for 20 to 30 minutes.
