MINI CHEESE CAKES 
1 1/2 c. graham cracker crumbs
1/4 c. sugar
1/4 c. butter, melted
3 (8 oz.) cream cheese, soft
1 (14 oz.) condensed milk, not evaporated
3 eggs
2 tsp. vanilla
1 can pie filling (optional)

Preheat oven to 300 degrees. Combine crumbs, sugar, and butter; press into 24 lightly greased tart pans. In large bowl, beat cheese until fluffy. Beat in condensed milk, then eggs and vanilla until smooth. Spoon about 3 tablespoonsful into each cup. Bake 20 minutes or until set.

Cool and chill. Top with favorite pie filling or serve plain. Refrigerate.
