HUMMUS 
16 oz. can chick peas
2 lemons or 6 tbsp. lemon juice
1 clove garlic
1/4 c. tahini powder (purchase at health food store)
2 tbsp. olive oil
1/2 tsp. salt
1 sm. onion
1 tomato
1 c. chopped parsley

Drain chick peas, reserving 1/4 cup liquid. Mince the garlic. Puree chick peas, lemon juice, garlic, tahini, oil, salt, and reserved liquid until very smooth. Chop onion and parsley and tomato. Toss. Put hummus on a plate and arrange the tomato relish next to it. Serve with pita bread.
