1/2 c. butter 2/3 c. cracker crumbs 1/4 c. grated Parmesan cheese 1/2 tsp. oregano 1/2 tsp. sweet basil 1/2 tsp. salt 1 lb. frozen haddock fillets, thawed & drained In a 13 x 9 inch baking pan melt butter in preheated 350 degree oven (5 to 6 minutes). Meanwhile, combine all dry ingredients in a 9 inch pie pan. Remove pan from oven and dip the fillets in the melted butter. Then dip the fillets in the cracker crumb mixture. Coat well. Arrange the coated fillets back in the baking pan. Bake at 350 degrees for 35 to 40 minutes or until fish flakes with a fork. |
