JELLY ROLL 
3 eggs
1 c. sugar
3 tbsp. water
1 c. flour
1/2 tsp. lemon extract
1 tsp. baking powder
Jam or jelly (preferably raspberry)
Icing sugar (confectioners' sugar)

Beat egg yolks, sugar and water until light. Fold in flour, sifted with baking powder. Add lemon extract. Whip egg whites and fold whipped egg whites into mixture. Pour in long shallow jelly roll pan lined with wax paper. Cook for 15 minutes at 375 degrees.

Meanwhile, spread clean dish towel with icing (confectioners') sugar and have jar of jelly ready. Place cooked hot cake on sugared towel. Remove paper. Spread with jelly. Roll with towel. Speed is of the essence. Towel will need washing.
