CARROT BREAD 
2/3 c. oil
1 c. sugar
2 eggs
1 1/2 c. enriched all-purpose flour
1/2 tsp. baking powder
1 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. salt
1 c. grated carrots
3/4 c. chopped pecans

Preheat oven to 350 degrees. Combine all ingredients and beat briefly. Pour into 2 (1-pound) greased loaf pans or 1 (2-pound) loaf pan. Bake at 350 degrees for 1 hour; test after 45 minutes.
