CARROT FRUIT BREAD 
1 c. white sugar
1/2 c. salad oil
5 drops mapline
1 tsp. real vanilla
1/2 tsp. cinnamon
1/2 tsp. coconut flavoring
1 tsp. salt
2 eggs
1 c. grated carrots
1/2 c. buttermilk

Mix well all of the above ingredients. Pour boiling water over 1 cup raisins. Let set a minute and drain. Measure out 1 cup of chopped walnut meats and 1 cup cut up dates (optional). Mix 1 1/4 teaspoons of soda into two cups of flour; mix the fruit and nuts into this, then add this to first mixture and stir well. Bake in two small or one large loaf pan. 350 degree oven, 55 minutes for large loaf, 40 to 45 minutes for small loaves. Use well greased pans.
