LOW CHOLESTEROL CINNAMON CAKE 
1/2 c. corn oil butter, softened
1 tsp. baking soda
1 c. non-fat plain yogurt
1 1/2 c. sugar, divided
4 egg whites
1 tsp. vanilla
1 1/2 c. sifted flour
1 1/2 tsp. baking powder
2 1/2 tsp. cinnamon

Spray a 9 inch square pan with non-stick coating. Mix soda into yogurt. Cream butter; add 1 cup sugar, egg whites, and vanilla. Sift together flour and baking powder and add alternately with yogurt mixture. Mix remaining 1/2 cup sugar and cinnamon. Pour 1/2 of batter into pan, then sprinkle with 1/2 cinnamon-sugar mixture. Continue in this manner until all batter and cinnamon-sugar are used up. Bake at 350 degrees for 30-35 minutes.
