2 c. sugar
2 c. vinegar
1 c. water
Good pinch of pickling spice
1 tsp. pickling salt

Cook beets until done. Peel. If big, cut into pieces. Put into kettle and add the ingredients above. Heat until hot; put onto jars and seal.
