PICKLED BEETS 
3 c. white vinegar
1 1/2 c. water
1 1/2 c. sugar, granulated
Pickling spices, if desired
Salt to taste

Boil beets until tender, about 30-45 minutes. Peel beets. Boil above ingredients for a few minutes. Add peeled beets and boil a few minutes longer. Bottle and cap tightly. Use more or less vinegar to suit your tastes. It takes approximately one cup of liquid to make one pint of beets.
